A vegetarian recipe that will make even the finest palates raise an eyebrow! Just because it’s a salad doesn’t mean it has to be bland. Our Tomahawk Mix perfectly enhances the roasted sweet potatoes and the homemade 'Santa-Fe' dressing!

1 Sweet potato

½ cup corn kernels

1 Red bell pepper

1 Avocado

½ cup black beans

½ Red onion

1 Romaine lettuce heart

½ cup Guerrier Mayonnaise

½ cup sour cream

1/3 cup milk
-
4 tablespoons Tomahawk Mix
-
Bacon Pepper
Instructions/ Directions
Preheat the oven to 400F.
Peel and cut the sweet potato into cubes about 2 cm.
In a mixing bowl, toss the sweet potato cubes with 1 tablespoon of Tomahawk Mix and a drizzle of olive oil.
Spread evenly on a baking sheet and roast for 15 to 20 minutes. Set aside.
Cut the red bell peppers into cubes, cube the avocado, dice the red onion, and roughly chop the romaine lettuce heart.
Prepare the dressing by mixing the mayonnaise, sour cream, milk, and 3 tablespoons of Tomahawk Mix.
Mix the sweet potatoes, lettuce, beans, avocado cubes, corn, red peppers, diced onion, and Guerrier dressing together.
Sprinkle with Bacon & Pepper mix to taste. Serve.
