Fresh sole rolls stuffed with imitation crab, seasoned with Innu Blend, Wild Mushroom Salt and Bacon & Pepper Mix, and served with a rich forest mushroom sauce. Try substituting real crab, especially when in season! Created by Anthony Le Brière, French barbecue champion and executive chef for Father's Cooker barbecues.

Roulés de sole à la goberge et au Mélange Innu

Ingrédients / Ingredients

  • 8 fresh sole fillets
  • 1 bunch flat-leaf (Italian) parsley, finely chopped
  • 1 egg white
  • ⅓ cup 35% cooking cream
  • 1 tsp Bacon & Pepper Mix
  • ½ tsp Wild Mushroom Salt
  • 2 tbsp Innu Blend
  • 4 imitation crab sticks, or an equivalent amount of crab meat
  • Forest mushroom sauce, homemade or store-bought, heated
  • 1 green onion, thinly sliced

Instructions/ Directions

    FOR THE STUFFING

    1. Dice 2 sole fillets and place in a mixing bowl. Add parsley, egg white and cream.

    2. Blend until smooth using an immersion blender.

    3. Add Bacon & Pepper Mix and Wild Mushroom Salt, and stir to combine.

    FOR THE SOLE ROLLS

    1. Lay two overlapping sheets of plastic wrap, each just under 1 metre long, on a large cutting board.

    2. Arrange the remaining 6 sole fillets so they overlap slightly. Sprinkle with Innu Blend.

    3. Spread the stuffing lengthwise down the centre of the sole and flatten slightly. Arrange the imitation crab or crab meat along the middle of the stuffing.

    4. Using the plastic wrap, roll the sole tightly around the stuffing into an even cylinder. Twist the ends of the plastic wrap and tuck them underneath the roll.

    5. Place the roll in a preheated steamer or over a double boiler. Carefully pierce a few small holes along the top of the roll with the tip of a knife. Cover.

    6. Steam for about 15–20 minutes, or until the fish is cooked through.

    7. Unwrap the cooked roll and cut into rounds about 1 inch thick.

    8. Spoon warm forest mushroom sauce into a shallow bowl and arrange three stuffed rounds on top. Garnish with green onion strips and an extra pinch of Innu Blend. Enjoy!
