Lobster Mushroom (Dermatose des russules): Despite the name, these mushrooms don't look or taste like lobster or crab. Named for their red-orange color resembling cooked crustaceans, lobster mushrooms have a woody, nutty flavor reminiscent of matsutake mushrooms and a firm texture.
