A comforting side dish that brings together slightly creamy braised cabbage, crispy bacon and the rich flavours of our Wild Mushroom Salt. Simple, savoury and perfect alongside grilled meat. The recipe makes 4 side servings, but it’s so delicious you might want to serve it as a main dish!

- 1 small green cabbage, shredded
- 200 g bacon, roughly chopped
- 1 cup chicken broth
- 1 tbsp salted butter
- 1 tbsp apple cider vinegar
- 1 to 2 tbsp Wild Mushroom Salt
- 2 tbsp 35% cream
Instructions/ Directions
- In a large Dutch oven, cook the roughly chopped bacon over medium heat.
- Once cooked, remove the bacon from the Dutch oven, leaving the fat behind. Increase the heat to medium-high. Add the shredded cabbage and sauté for 5 to 7 minutes, until it begins to soften and brown.
- Add the Wild Mushroom Salt, chicken broth, apple cider vinegar and half the bacon.
- Cover and cook over low heat for 25 minutes.
- Remove the lid and cook for another 10 minutes to reduce the liquid.
- Add the butter and cream. Mix well, then top with the reserved bacon.
- Enjoy!
Note
Chef’s tip: Be sure to brown the cabbage well before adding the liquid. More colour means more flavour!
