Through 69 original recipes, chefs Peter Moineau, Xavier Deschênes and Maxime Lizotte bring ancestral traditions and modern culinary creativity together. Game, fish and seafood, wild mushrooms, berries, maple, boreal plants and carefully selected spices come together in a cuisine that embraces different influences and breaks down culinary boundaries.
