La Scorbut is a mildly spicy hot sauce with no added salt. Made with jalapeño peppers, fresh lime juice, Green Alder Pepper (also known as dune pepper), and pure Québec maple syrup, it brings bright, tangy flavour to everyday meals. Try it with marinades, tempura shrimp, nachos, Chinese-style fondue, oysters, or your favourite grilled meats. It also pairs beautifully with our classic spice blends.

BOREAL INGREDIENTS

Green Alder Pepper (Alnus crispa): Hand-harvested male catkins with distinctive citrusy, slightly woody notes.

Pure maple syrup: Long used by First Nations, it brings a gentle sweetness that balances the hot sauce's tangy, spicy flavours.

WHY THE NAME?

During the winter of 1535–1536, Jacques Cartier's crew was struck by scurvy, a disease caused by severe vitamin C deficiency. The St. Lawrence Iroquoians of Stadacona helped the French explorers by introducing them to annedda, a plant-based infusion that helped many sailors recover.

Our lime-based hot sauce, La Scorbut, is a nod to this historical episode and to the valuable knowledge of First Nations.
