A salad for every season, combining spring greens and maple with pecans, apples and dried cranberries. Topped with golden grilled Doré-mi cheese, it's delicious with a glass of dry white wine.
Ingrédients / Ingredients
-
2 cups spring mix greens
-
1 French shallot
-
1 apple
-
1 block Doré-mi cheese
-
½ cup dried cranberries
-
1 cup pecans
-
1 cup maple syrup
-
1 cup olive oil
-
1 tsp Dijon mustard
-
½ cup apple cider vinegar
-
4 tbsp Traditional Blend
Instructions/ Directions
Cook the pecans with 100 mL maple syrup over low heat, stirring gently until the syrup crystallizes and coats the nuts. Immediately spread on a baking sheet to cool.
Dice the apple, thinly slice the Doré-mi cheese and coat the cheese with 1 tbsp Traditional Blend.
Heat a little olive oil in a skillet over medium-high heat. Cook the seasoned cheese until golden, 2–3 minutes per side.
DRESSING
Whisk the chopped shallot, cider vinegar and Dijon mustard together. Slowly drizzle in the olive oil while whisking to emulsify. Stir in 3 tbsp Traditional Blend and ½ cup maple syrup.
Toss the greens, pecans, cranberries and apple with dressing to taste. Refrigerate the remaining dressing.
Top with grilled Doré-mi cheese and serve.

Note
Chef's tip #1: Keep cut apples in cold water with a little lemon juice to prevent browning.
Chef's tip #2: If the dressing separates, shake it vigorously in a tightly sealed Mason jar.
