Dune pepper, also known as crisp pepper, is actually the male catkin of a variety of crisp alder (Alnus crispa). This shrub grows in temperate regions of the northern hemisphere, particularly in humid and wooded areas of Canada. The catkins are harvested during periods of extreme cold in order to limit their resinous appearance. They are then dried and used as seasoning.
In cooking, dune pepper has a slightly spicy flavor, with notes of nuts and cedar. It can be used to spice up sauces, meats, fish and vegetables. It can also be ground and used as a condiment. It is often used in smoked meat dishes, marinades, stews, soups and sauces. The latter can also be used to spice up cheeses, cold meats and pasta dishes.
