- 1 minced shallot
- 1 tbsp melted butter
- 1 tbsp cold butter
- 100ml red wine
- ½ cup beef broth
- 3g crushed sweetfern male catkins

Wild Mushroom Salt (to taste)

Boreal Pepper Mix (to taste)

100g northern berries of your choice (blueberries, raspberries, cranberries, cloudberries, etc.)
Instructions/ Directions
Sauté the shallot in butter until translucent.
Add the red wine and beef broth. Stir in the crushed sweetfern male catkins and reduce by about a third.
Adjust seasoning with salt and pepper. (Taste to ensure it's to your liking.)
Add the northern berries, let simmer on low heat for about 8 minutes or until the berries are tender. The sauce is ready when it coats the back of a spoon.
Note
Be careful, sweetfern male catkins are very flavorful: don't add too much!
Use this sauce with duck, beef, or any game meat for a delicious and impressive boreal taste!
