Taste profile :Inspired by the arrival of spring, this cocktail of boreal flavors made with maple flavored salt offers vegetal and earthy aromas supported by cedar and cumin. On the finish, a subtle touch of wood-fired aromas will emerge, enhanced by the smoked sweetness of smoked paprika.
Atikamekw: This Nation is established in the valley of the Saint-Maurice River, which allows them to enjoy an exceptional hunting territory and rivers full of fish. Their original name means “white fish”. The Atikamekw language is still used today, making it one of Quebec's Aboriginal languages least threatened with extinction.
Duck: The duck, heralding associations, evokes a sense of community, emotional stability, balance and hardiness. Duck feathers are the symbol of coming of age.
Maple sugar: It can replace refined sugar in most culinary preparations and also enhances savory dishes. It sweetens and enhances fruit salads and compotes.
In Quebec, the Atikamekw occupy the central part of the province and are divided into three communities: the community of Wemotaci, connected to La Tuque by a 115 km forest road, is located near the Saint-Maurice River, the community of Manawan is nestled on the shores of Lake Metapeckeka, about 4h30 by road from major centers, and the community of Opitciwan is located 280 km west of Roberval.
