- 1 duck breast
- 1 oz gin
- 400g coarse salt
- 200g maple sugar
- 1 lemon
- 1 lime
- 1 orange
Instructions/ Directions
- Rub the duck breast with the gin.
In a mixing bowl, combine the salt and maple sugar. Add the zest from the lemon, lime, and orange. Mix well.
- Place the duck breast in a dish large enough to keep it as flat as possible.
- Coat the duck breast evenly on all sides with the curing mixture.
- Cover the dish with plastic wrap and refrigerate for 24 hours.
- Rinse the duck breast thoroughly under cold water, then pat it dry with a paper towel to remove all excess moisture.
- Let the duck breast dry in the refrigerator for another 24 hours, covered with plastic wrap.
Slice thinly, about 1/6 inch thick.
