“I have been exploring the Aboriginal territory of Québec for more than twenty years now and had the chance to visit more than 30 communities, with whom I have built a strong relationship. The best memories I have with First Nations are undoubtedly their meals.
It was always an occasion to share with others, and where everyone is a special guest. Traditional Aboriginal meals allow to dive in the territory to discover rich flavours.
This is why I had always hoped to connect with them, in order to combine the cuisine of the Aboriginal territory with my experiential knowledge, while pleasing non-Aboriginal people. Hence, after years of research, development and all those delicious flavours I cooked with for months, I have created the Spices of the Warrior to honour the workers that tackle this large territory every day for unique flavours.”
